the best salsa in the world.

want to know a secret? my aunt k entrusted me with her salsa recipe. that's not the secret. the secret is that this salsa is truly the best salsa in the world. it has changed my life and hope it does the same for yours. i make it for b & me and it lasts us about 2 wks. here's the recipe:

ingredients:
1. 4 roma tomatoes
2. 2 cans rotel tomatoes (we like 1 original, 1 hot)
3. 2 cans diced tomatoes
4. can of green chiles (we actually substitute chopped jalapeƱos for a kick!)
5. ~5 scallions (aka green onions), chopped
6. 1 bunch of cilantro (we like LOTS of cilantro), chopped
7. lime zest of 2 limes (my artistic liberty)
8. juice from 2 limes (gotta use fresh limes here - no bottled juice!)
9. packet of burrito seasoning (or taco - we like burrito)
10. chili powder (lots)
11. ground cumin (lots)
12. garlic salt (a hearty helping)
13. Tony Chachere's seasoning (to taste)
14. salt & fresh ground black pepper


mix all ingredients in a bowl. if you like it really chunky, leave as is. if you like it middle-ground chunky, put half in food processor and blend. add it back to chunks = perfectly chunky salsa. if you like it with no chunks, then blend it all in food processor. warning - it can get pretty hot so fair warning. (we like our heads on fire).

if you make it, lemme know whatcha think. we like it, of course with tortilla chips, but it's perfect for fish tacos (our recipe coming soon) or any Mexican foods you so desire.
