after watching this week's South Park episode on whaling and Japan, i just had to steal this from my friend, L who posted it on her FB. I don't know yet the story behind this pic, but i think it is one of the most hilarious things i've ever seen! hahahaha

the best salsa in the world.

want to know a secret? my aunt k entrusted me with her salsa recipe. that's not the secret. the secret is that this salsa is truly the best salsa in the world. it has changed my life and hope it does the same for yours. i make it for b & me and it lasts us about 2 wks. here's the recipe:

ingredients:
1. 4 roma tomatoes
2. 2 cans rotel tomatoes (we like 1 original, 1 hot)
3. 2 cans diced tomatoes
4. can of green chiles (we actually substitute chopped jalapeƱos for a kick!)
5. ~5 scallions (aka green onions), chopped
6. 1 bunch of cilantro (we like LOTS of cilantro), chopped
7. lime zest of 2 limes (my artistic liberty)
8. juice from 2 limes (gotta use fresh limes here - no bottled juice!)
9. packet of burrito seasoning (or taco - we like burrito)
10. chili powder (lots)
11. ground cumin (lots)
12. garlic salt (a hearty helping)
13. Tony Chachere's seasoning (to taste)
14. salt & fresh ground black pepper


mix all ingredients in a bowl. if you like it really chunky, leave as is. if you like it middle-ground chunky, put half in food processor and blend. add it back to chunks = perfectly chunky salsa. if you like it with no chunks, then blend it all in food processor. warning - it can get pretty hot so fair warning. (we like our heads on fire).

if you make it, lemme know whatcha think. we like it, of course with tortilla chips, but it's perfect for fish tacos (our recipe coming soon) or any Mexican foods you so desire.

good pasta recipe

recently i discovered mark bittman (thanks j!) who writes a food blog for NY times and has written millions (or at least seems like millions) of cook books including How to Cook Everything Vegetarian which one of my coworkers lent me for a while (thanks again j!). last nite, we made caramelized onion pasta which was YUM YUM YUM.

mark bittman is great and is very helpful in his book. we are going to start collecting his cookbooks! here's the recipe sort of:

2 servings

3 medium onions sliced (we used food processor)
2 Tbsp olive oil then 1 Tbsp in tossing
some capers
some black olives
salt & pepper
1/2 pound long pasta (we used whole wheat thin spaghetti)
water for boiling
kosher salt for boiling

1. slice onions. place in large pan over low-med heat covered. cook stirring every 5 min and after the mushrooms start losing the moisture (~20 min or so) and begin sticking to bottom, remove cover and turn up heat to medium.
2. bring water to boil. while waiting, add in 2 Tbsp oil to onions. let the onions cook ~15-20 min more. add in capers and olives during this step. once water is boiling, add in kosher salt and pasta. cook until al dente.
3. drain pasta reserving 1/2 c liquid. toss pasta with onion mixture in bowl - add the last of the olive oil and a bit of the reserved liquid (we didn't use all of the pasta liquid). serve with sprinkles of parmesan, goat cheese, or feta (just very little) - this part is optional.

very yummy but would probably be better served as a side to something else...haven't figured out yet what that something else would be. any suggestions?

neato green living

love this website of prefab housing! maybe one day....


and love the michelle kaufman designs (mkdesigns). my fave is mkBreezehouse.

so i'm gonna try...

to start blogging again. but not putting pressure on myself to perform! ha!

just an update if anyone is interested:

i live in Memphis, TN with my hubby, B. i work as an occupational therapist at a local hospital doing predominantly outpatient pediatrics but also outpatient adults (neuro, ortho, hands, etc) and acute care. one day a week i work at a physician owned hand therapy clinic. love it all!

not sure yet what i plan to blog about. probably random.

interests include research, eating healthy, exercising, my hubby, music, guitar, piano, reading, vegetarian recipes, laughing, love, green living, prefab housing.

we'll see where this goes!
